It's beginning to look a lot like Christmas - Winter Coffee-time Toffee Treat

Today I'm bringing you a new Christmassy recipe especially for those times when you're calling your friends and family to your place to have a coffee or hot chocolate or warm tea. This little treat is on 34 kcal for a little square of toffee, which is pretty good and they're really gooey and delicious! Enjoy them and let me know in the comment how you like them!

Christmas Toffee Coffee-Time

♥ 68 gr rice cereal (Coco Pops, for instance)
♥ 152 gr chocolate chips
♥ 1/2 teaspoon salt
♥ 1/4 teaspoon vanilla extract
♥ 32 gr corn syrup or honey
♥ 207 ml sweetened condensed milk
♥ 100 gr brown light sugar
♥ 57 gr butter

INSTRUCTIONS: Over medium heat, melt the butter in the pan. After is melted, add the brown sugar and stir until is combined and melted. Add the condensed milk and the corn syrup or honey (recommended corn syrup) ad mix well few times and let it sit for approximately 4 minutes until the texture is more dense. Add salt and vanilla. Turn off the heat and add the cereal and stir well at the same time. Transfer the mix to a greased pan or line one with aluminium foil yourself. Sprinkle the chocolate chips all over the hot mix and let them sit so they melt on top of the mix. After 5 minutes you will take a spatula and evenly spread the melted chocolate. Let this sit on the fridge or let is outside for at least 3 hours until it got gooey and chewy yet more solid.

Enjoy them with your favorite tea, hot chocolate (if you have a super sweet tooth) or coffee these holidays! Make them for your friends and they'll love it!

See you soon!

A healthy breakfast idea: Bruschetta Benedicta

Today I just made this for myself and thought of sharing here, it's a very simple and easy way to start your day! If you like to have natural source of protein for breakfast then this is for you!

Bruschetta Benedicta, serves 2

♥ bruschetta bread, I use what we call ''countryside bread'' and I toast it nicely
♥ 1 avocado, mashed with the fork and tossed with lemon juice (prevents oxidation)
♥ 2 medium eggs
♥ some parsley
♥ some dill
♥ ground black pepper

INSTRUCTIONS: Once you have the bruschetta prepared, mash the ripped avocado using a fork, toss it with some fresh lemon juice and a pinch of salt and set it aside. Prepare the Benedict eggs. You will need a saucepan having your water poaching (not boiling). Take the end of a wooden spoon and start creating a ''tornado'' in the water just stirring in one side the water creating a vertigo. Crack your eggs right in the middle of the vertigo, they will instantly clot, the egg white will remain in a round shape and the egg-yolk will be nicely warm and half cooked.

Need extra help? Watch this video.

Now once you have your eggs done. Spread the avocado on your bruschetta, add the egg, add a pinch of black pepper, chopped parsley, a little pinch of fresh dill and you're ready to devour this!

Let me know how you liked it!

Transylvanian Saxon Recipes: Traditional Horns

Might be because there are only 66 days left for Christmas or because I just simply like writing about food, today I decided to open a new ''category'' here for Saxon recipes. Transylvanian Saxons are people of German ethnicity that moved to Transylvania from the 12th century onwards. They love to preserve traditions and form a strong Lutheran (usually though they can also be Orthodox) religious bond, however, the last generations are starting to feel way apart from religion.

Hermannstadt, Transylvania

In any case, due to the strong traditions and the willing of these people to preserve these, passing from grandparents to parents and kids, they enjoy a great variety of rich delicious food that has been cooked according to grandmother's traditions until nowadays. There is currently a cookbook out there and it's a pretty thick one but however is only in German and currently impossible to find it.

But I came up with this idea of sharing some of the recipes that got to my hands and some that I have tried since I was a kid, which are truly delicious and you won't regret, despite these using sugar, margarine,... there are some things that you cannot simply change and when comes to traditional recipes it's truly important to stick with the original recipe otherwise the result it's going to suffer quite a bit. So I suggest not to juggle too much with the quantities or ingredients...

The first recipe today it's going to be Transylvanian Saxon ''Croissants'' (literally: Transylvanian Saxon Horns)

♥ 2 big sour apples
♥ 2 tablespoons of butter
♥ 1 tablespoon of lemon juice
♥ 2 tablespoons of sugar
♥ some icing sugar
♥ 1 teaspoon of cinnamon
♥ 80 grams poppy seeds, ground
♥ 1 package of puff pastry dough (you can find it in your local supermarket, in Finland this is found at S-Market, Alepa or Citymarket and it's pretty common once the winter season is on)

INSTRUCTIONS: Get the puff pastry dough out of the freezer and defrost it. Peel the apples and cut them in slices. In a pan, melt the butter and add the sliced of apple and sauté them until they are really tender Get the pan out of the heat. Add in the pan your sugar, the lemon juice and cinnamon and mix them in the pan to get the flavors together. Let them sit for 2-3 minutes. At the end add the poppy seeds, mix and leave them sit aside for 15 minutes.

Now you take your puff pastry dough and cut it in 6 big squares. In the middle of each square you place some of the apple mix and roll the square in such way that you actually get shape of a horn/croissant.

Place baking paper on your baking sheet and make sure that when you'd place the horns to leave some space in between (as they will expand - so you will avoid them to stick to eachother).
Bake them at aprox. 190 Celsius degrees for about 15 minutes or until you see they are done (easy to stop when the puff pasty has raised and is getting golden).

Enjoy them both cold or hot with some icing sugar sprinkled on top!

Enjoy!
